CIRCUMFERENCE 2019 is an international seminar on sourdough that connects research, dissemination and gastronomy. The aim for this seminar is to create research results that can be used in a wider context, to learn about and inspire new regional food products, to understand and inspire use of residual products from food production and to create a network and exchanges among scientists and bakers.
CIRCUMFERENCE is organised by FOCUS (Center for Food Culture Studies) at Aarhus University and Food Organisation of Denmark as part of European Region of Gastronomy.
